Our standard sessions host up to 12 guests — a choice, not a limit: everyone gets their own place at the bench, their own panetto, their own matterello. For larger groups — team building, hen parties, celebrations — we arrange private formats on request.

Small by design, private for groups
A sfoglia cooking class works when our resident chef can watch every dough and correct every hand. That is why the public calendar stops at 12 guests per session. When a larger group comes along, we don’t squeeze it into that format: we build a dedicated private format — the session is entirely yours, the pace adapts to the occasion. The masterclasses to choose from
Every group works on one of our masterclasses, from €130 per person in the standard format. Each one lasts about 3 hours and ends with the meal you cooked together, local wine at the table (one bottle for every four guests) and gelato with 25-year-aged Traditional Balsamic Vinegar of Modena DOP from Acetaia del Cristo:
- Tagliatelle Masterclass – Fresh Tomato (€150, vegetarian) — the class our story is built around, gelato with traditional balsamic vinegar (Acetaia del Cristo)
- Tagliatelle Masterclass – Ragù Bolognese (€160) — slow-cooked ragù, gelato with traditional balsamic vinegar
- Gnocchi Masterclass — hand-made potato gnocchi: fresh tomato (€150, vegetarian) or ragù bolognese (€160)
- Farfalle e Garganelli Masterclass — two shapes from a single sfoglia: fresh tomato (€150, vegetarian) or ragù bolognese (€160)
- Ravioloni Verdi Masterclass – Ricotta (€150, vegetarian) — green spinach sfoglia, ravioloni filled with ricotta
- Risotto Masterclass — risotto giallo alla milanese, stirred to a proper mantecatura: Saffron Risotto (€130) or Luganega Risotto, the saffron risotto with luganega, the fresh pork sausage of Lombardy (€140)
The aperitivo, group edition
Every class includes an aperitivo with cured meats and cheeses. In a group it comes into its own: while the dough rests, everyone gathers around the same board, and the chatter that starts there is already half the party. The spritz is not on the masterclass menu, but if you are curious, just ask: we will gladly show you how to make one during the class.
Why it works for team building
Unlike a dinner or a tasting, here everyone is active. People talk naturally, help each other roll the sfoglia, share the result at the table. It’s tangible, physical, memorable — not a posed group photo.

Send your request via the booking form with the number of participants, your preferred date and the occasion. We reply with date proposals, a suggested class and a tailored quote for the private format. No upfront payment.
