Fresh ravioloni being made during a ravioli cooking class in Como

The experience

Some doughs tell you where they come from. The sfoglia of these ravioloni is green because spinach is worked straight into the dough – kneaded until the colour runs even and the pasta turns silky under your palms. In this hands-on ravioli pasta masterclass on Lake Como you build it yourself, from the first well of flour to the last fold, with Marco, our resident chef, beside you at the board.

Then comes the part that decides everything: rolling the sheet to the right thickness, spacing the ricotta filling, pressing the air out and sealing each raviolone so it holds in the pot. They are small gestures – the ones that separate ravioli that burst from ravioli that don’t – and you practise every one of them until your hands remember.

The rolling follows the discipline our resident chef studied at Rina Poletti’s Accademia della Sfoglia, the art of hand-rolled sfoglia we carry on here. No machine between you and the dough: a wooden board, a matterello and the time it takes.

While the work rests, the table turns to the aperitivo: a board of cured meats and cheeses to share, time for a chat before going back to the sfoglia.

Dessert carries a story. We serve gelato with traditional balsamic vinegar – the Traditional Balsamic Vinegar of Modena DOP from Acetaia del Cristo, a family Emilian acetaia where it starts from a single ingredient, cooked grape must, and ages 25 years in a battery of casks of different woods until a few drops are enough. Over the last spoonfuls, our resident chef tells you how that vinegar is made: the one matured in cherry-wood barrels is fruity and sweet, sweet-and-sour and perfect on ice cream. Read more about the Traditional Balsamic Vinegar of Modena we use.

The masterclass takes place in a modern, elegant yet welcoming home, lasts around three hours, and you eat everything you make – ravioloni, wine and dessert – at one table.

The signature dessert

Gelato with Traditional Balsamic Vinegar of Modena, aged 25 years

Every masterclass ends the same way: a scoop of gelato and a few drops of Traditional Balsamic Vinegar of Modena DOP from Acetaia del Cristo, a family acetaia in Modena run for three generations.

It is made from one ingredient, cooked grape must, and it waits twenty-five years in a battery of wooden casks. Dense, dark, sweet and sharp at once: it is served by the drop. The one aged in cherry wood is the fruitiest, and it is the one we pour over the gelato.

FAQ

Frequently asked questions about this class

Is the ravioloni class vegetarian?

Yes: green spinach sfoglia and a ricotta filling — a menu that is vegetarian by nature, giving up nothing. The aperitivo board also has cured meats: vegetarians simply keep to the cheeses.

What's included in the price?

The hands-on class of about three hours with all ingredients and your apron, an aperitivo with cured meats and cheeses, and the meal you cooked, eaten together at the table with local wine (one bottle for every four guests). To finish, our signature dessert: gelato with 25-year-aged Traditional Balsamic Vinegar of Modena DOP from Acetaia del Cristo. No upfront payment.

We had fun and learned so much! They were so knowledgeable and treated us like family. Not to mention the food was delicious (and maybe I can try to recreate it again at home)! They provided insight into the history of Italian food culture that can only come from generations who live here.
